How to make the perfect cup of coffee – with a little help from science

Have you ever wondered why the coffee you make at home tastes different from the drinks you buy in cafes? Or why coffee from the same place can taste different throughout the week? You may be quick to blame the barista for changing the recipe, but our recent study, published in Matter, suggests that this variation is down to an inherent inconsistency of common brewing methods.

Luckily, we believe to have discovered a path to making a great espresso – to your taste – every time.

The quality of a cup of coffee depends on the coffee’s variety and origin, its roast and the water chemistry. The brewing method also plays a critical role in determining the overall flavor. Espresso is certainly the most complicated brewing method because it requires precise measurements. Anti-inflammatory diet linked to reduced risk of death from heart disease and cancer

In the study of 68,273 Swedish men and women aged 45 to 83 years who were followed for 16 years, participants who most closely followed an anti-inflammatory diet had an 18% lower risk of all-cause mortality, a 20% lower risk of cardiovascular mortality, and a 13% lower risk of cancer mortality, when compared with those who followed the diet to a lesser degree. Smokers who followed the diet experienced even greater benefits when compared with smokers who did not follow the diet.

Anti-inflammatory foods consist of fruits and vegetables, tea, coffee, whole grain bread, breakfast cereal, low-fat cheese, olive oil and canola oil, nuts, chocolate, and moderate amounts of red wine and beer. Pro-inflammatory foods include unprocessed and processed red meat, organ meats, chips, and soft-drink beverages.

Coffee delivery drone patented by IBM

A coffee-delivering drone that can detect when people are tired and bring them a drink has been patented by technology company IBM.

The patent describes a drone that can identify the “cognitive state” of office workers and lower cups of coffee on an “unspooling string”.

Canada’s Second Cup plans to convert some of its coffee shops into pot dispensaries

Second Cup wants to serve up a different kind of buzz by converting some of its coffee shops into cannabis dispensaries and, when legal, pot lounges.

Shares in the Canadian restaurant operator rose as much as 31 per cent to $3.62 apiece in early afternoon trading on Thursday after it announced that it has signed an agreement with marijuana clinic operator National Access Cannabis to develop and operate a network of recreational pot stores. However, neither currently has a licence to sell marijuana, so the deal is contingent on approval from the governments, as well as from franchisees and landlords.

If and when regulations allow, the two companies also want to open coffee shops for cannabis consumption, said Second Cup’s board chairman Michael Bregman.
